I have realised over the years that creating the perfect plantain tart is truly a difficult problem. So much can go wrong. I once tried to tell a baker what was wrong but they just looked at me like I was a big child living in a man's body that wanted to be loved. Something always goes wrong in the production of tarts. Either the crush is too hard, or it is not sweet enough, or the tart ends up being food colouring added to green bananas.
And I am not being picky but some people need to go back to baking school.
